2021 Sur Lie Rosé

Sur Lie - meaning left on lees - this Rosé is made from Mourvèdre from the Hilltops region. Aromas of red cherries, violets, thyme and smoked meats, barrel fermented for 8 months, the Sur Lie Rosé has texture, complexity and body.

Pair me with BBQ lamb, ratatouille or grilled marinated seafood such as octopus or salmon.

Production: 65 dozen 

Vinification: The grape were gentle pressed to tank then settled and racked to older barrels. Fermentation was spontaneously started wild yeasts and fermented to dry. 1 barrel was allowed to go through malolactic fermentation and the lees were stirred for the first 3 months. The wine was bottled after 8 months in barrel.

Mourvèdre. Aged 8 months in barrel, on lees obviously, with 25% mlf. An attractive pale pink-cherry colour and a very savoury palate à la mourvèdre. Red fruits, some jamon/charcuterie flavours, spicy and very refreshing. Finishes crisp and dry with just the right amount of palate weight.

Medium intense salmon pink colour. Nose lifts with red cherry and a hint of struck flint reduction. Vibrant and intense cherry and raspberry fruit, layered alongside a hint of violets and blood orange as well. Crunchy acidity brings vitality to the palate. Good length and certainly leaves you wanting to come back for more.
